Mocha Pudding
8 tablespoons of cornstarch
3 cups of milk
1 cup of cream
4 tablespoons of coffee liqueur
1/4 cup of strong espresso
1 cup of semisweet chocolate chips
1 cup of whipped cream
1/4 cup of grated chocolate
In a small bowl mix the cornstarch and one cup of milk until smooth. In a 2 quart saucepan bring the milk and the cream to a soft boil over medium heat. Add the chocolate, the coffee and stir well until all the chocolate has melted. Add the cornstarch mixture a little bit at a time and stirring constantly for about 1-2 minutes until the mixture has thickened. Add the optional coffee liqueur and stir well.
Pour into dessert cups and cool in the refrigerator overnight. Top with whip cream, grated chocolate and serve.
