b'Dried Cherry-Chocolate Fudge CookiesKENT RATHBUNYields 60 2-bite cookies X cup dried cherriesW cup amaretto1V cups bittersweet chocolate3 ounces butter2W cups C&H Golden Brown Sugar or Domino Light Brown Sugar1 teaspoon baking powder2 eggs1 egg yolk2 teaspoons vanilla extractC dcup all-purpose flour1W cups semisweet chocolate chipsPour the amaretto over the dried cherries and allow them to sit until most of the liquid is absorbed.Melt the bittersweet chocolate and butter, and set aside to cool.Combine the brown sugar, baking powder, whole eggs, egg yolk and vanilla. Add to the cherries. Stir in the melted chocolate mixture, the flour and the semisweet chips, and stir until well combined.Place the batter in the refrigerator to cool for about 30 minutes.Scoop out rounded tablespoon-size scoops onto a sheet pan that is lined with parchment paper or a silicone mat. Bake at 350 degrees for 10 to 14 minutes.Allow the cookies to cool on the baking sheet for 5 to 10 minutes before moving them; they will be very soft.
